This oil is made organically in a Tunisian mill by crushing 12 pounds of fresh, whole ripe cayenne chilies per one gallon of 100 percent organic extra virgin olive oil. The fresh chilies and oil are fused for two hours before decanting and filtering. This oil is an essential ingredient for all North African fare, such as harissa, couscous, seafood, relish, salsa, roasted lamb and chicken, as well as a complement to barbeque.
